Zucchini Feta Skewers

Zucchini Feta Skewers are a delicious gluten-free appetizer recipe that comes together in under 15 minutes. Fresh zucchini ribbons are rolled around creamy, tangy, and slightly spicy marinated feta and grilled until they are warm and tender.  These zucchini skewers are so simple yet still feel festive and elegant. Serve at your next dinner party or BBQ.

  • 1 medium zucchini trimmed and peeled
  • 6 ounces marinated feta cheese


  • Prepare the zucchini: Use a vegetable peeler or a mandoline slicer to slice the zucchini into thin, long ribbons.
  • Roll: Place one zucchini ribbon flat on your cutting board. Place a cube of marinated feta on the short end closest to you. Roll the zucchini ribbon away from you to fully encase the marinated feta. Repeat until you have used all of the zucchini.
  • Skewer: Gently slide 3 of the zucchini-wrapped feta cubes onto a small bamboo skewer. (It’s not a bad idea to use 2 skewers to keep them from rolling around while grilling.)
  • Get ready: Brush a cast iron griddle or grill pan with a little olive oil. Heat to medium-high.
  • Grill: Assemble the zucchini skewers on the heated surface and cook for a couple of minutes on each side or until the zucchini layer gains some color.
  • Serve: Serve warm, with the rolls still on their skewer.


  • Be very careful if you use a mandoline slicer: It’s easy to cut yourself! Slice the zucchini slowly and steadily, being careful not to apply too much pressure, as this can cause slipping. Always keep your fingers well away from the blade. And, consider using cut-resistant gloves for added protection.
