Chilli pork stir-fry
Brightly coloured and full of all the big, bold Asian flavours we know and love, this Chilli pork stir-fry is a feast for both the eyes and the tongue.
Ingredients
- 1 tablespoon vegetable oil
- 600 gram pork fillets thinly sliced
- 1 onion cut into wedges
- 1 carrot halved lengthways, thinly sliced diagonally
- 2 celery stalks sliced
- 100 gram green beans trimmed, cut in half diagonally
- 1/4 cup 60ml sweet chilli sauce
- 2 tablespoon fish sauce
- juice of 1 lime
- 2 teaspoon brown sugar
- 1/2 cup 75g crushed peanuts
- 1/2 cup chopped coriander plus extra to serve
- cooked rice to serve
Instructions
- Heat half of oil in a wok or large frying pan on medium. Stir-fry pork, in batches, 1-2 minutes, until browned. Transfer to a bowl.
- 2 Add remaining oil to wok and heat. Stir-fry onion, carrot and celery, 2-3 minutes, until softened. Add pork and beans and stir-fry, 2-3 minutes, until beans are just tender.
- 3 Whisk together sweet chilli sauce, fish sauce, lime juice and sugar. Add to wok and stir-fry, 1-2 minutes, until heated through. Remove from heat.
- 4 Add peanuts and coriander, toss to combine. Serve with rice and extra coriander, if you like.
