Ingredients
  

  • 4 slices of wholemeal seeded bread
  • Mayonnaise
  • Butter
  • 2 ripe tomatoes - sliced ½cm thick
  • ½ a small red onion sliced
  • Salt and freshly ground black pepper
  • 1 cooked beetroot sliced
  • 2 radishes sliced
  • 4 leaves of butter lettuce
  • Optional additions
  • 2 hard-boiled eggs sliced
  • Coleslaw

Instructions
 

  • Spread mayonnaise over two of the bread slices and butter over the others.
  • Layer the tomato and onion onto the buttered slices, then season with a little salt and black pepper. Add the beetroot, radishes, coleslaw and hard boiled eggs. Top with the butter lettuce, then sandwich together with the remaining bread.
  • Press down lightly, cut into quarters and enjoy!
